Tender chunks of beef simmered with fresh vegetables and savory herbs in a rich broth. This comforting soup is perfect for chilly days and makes great leftovers.
Ingredients (Serves 6–8)
1 ½ lbs beef stew meat, cut into bite-sized pieces
2 tbsp olive oil
1 large onion, diced
3 carrots, sliced
3 celery stalks, sliced
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
6 cups beef broth
1 ½ cups potatoes, diced
1 cup green beans, trimmed and cut
1 cup corn kernels (fresh or frozen)
1 cup peas (fresh or frozen)
1 tsp dried thyme
1 tsp dried oregano
2 bay leaves
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
