Start the Rice
In a pot, combine rice, water, and a pinch of salt. Bring to a boil. -
Add Milk + Simmer
Stir in the milk and sugar. Reduce heat to low. -
Cook Slowly
Simmer 35–45 minutes, stirring often so it doesn’t stick.
It will thicken as the rice absorbs the milk. -
Finish
Stir in vanilla (and cinnamon if using).
If you like raisins, add them during the last 10 minutes. -
Serve
Enjoy warm, or chill it for a thicker, cold version.
